Michael Morrison

Chef de Cuisine

Michael began his Culinary Career in the San Francisco Bay Area and after spending his early cooking years working in 3 and 4 star Kitchens he would go on to become the Head Chef of Loretta Keller’s Famed Coco500 - for seven years. 


Michael was then appointed the Executive Chef of Hiro Sone’s Michelin Starred Ame restaurant located in downtown San Francisco in the St. Regis Hotel. 


Along with cooking, traveling is a passion of Michaels. His trips to Europe and Asia have broadened his view of ingredients and techniques and have since inspired his cooking style. 


“I am excited about our restaurants at The Hall, Having spent time at the Chef and I in Nashville and seeing the way the guests respond to the food and service I have no doubt that Orlando will love what we are doing.”    


Michael looks forward to teaming up with Chef Chris Rains to help bring his vision for both The Chef and I Orlando and Pasion Orlando come to life.

Travis Chasteen

Sous Chef

Chef Travis Chasteen is a Florida native, born and raised on the east coast of Central Florida. Food has been one of his biggest passions throughout life starting at a very young age, from his first taste of cooking in his granny's kitchen to pursuing it as a career. For nearly two decades, he has been working in a variety of professional kitchens ranging from fast casual to fine dining. In his career he has expanded on that passion, discovered the food he loves to cook most, and really honed his craft. Specializing in American regional cuisine, he has a strong southern influence and goes heavy on the pork. Warm fall flavors are his favorite, but sometimes he just can't seem to stay away from bright tropical fruits and flavors. 


Chef Travis is truly grateful for the opportunity to be a part of Rains Management. He is eager to take the reins on The Chef and I Orlando and continue the legacy established in Nashville. In addition to his experience as a Sous Chef, Travis also brings a desire to educate people about food and cooking techniques. With a serious sweet tooth, one of his favorite dishes is our Cereal Milk Cheesecake and he thinks you just might fall in love too. And when he hangs up his chef coat, you can find him donning a tropical button up and either watching his Minnesota Wild play, catching a movie with his girlfriend, or attending live music.
